Turkish Menemen

Menemen is a famous Turkish recipe that is so flavorful and colorful that you can become addictive. It’s made by preparing the vegetables and adding spices to make a sauce. Scrambling eggs are barely set and make everything even more creamy.

It looks like a juicy omelet but it tastiest so much better! Serve it with bread to dip, fresh bread slices are the best here. It’s one of the warmest breakfasts that you will want to make again and again.

This recipe can seem hard but it’s actually very simple. You can make it a on-the-go breakfast dish. You can actually dip out of the same pan with your children or partner, in a racing style to make your breakfast more fun. You can serve it in separate plates, of course, but locals eat it out of one pan, so we urge you to try it.

  • 15 ml butter
  • 1 chopped onion
  • 1 clove garlic
  • 2.5 oz chorizo, spicy
  • 4 ripe tomatoes, chopped
  • 0.5 pepper, sliced
  • 2 eggs
  • 4 ml salt
  • 3 ml paprika
  • 4 ml black pepper
  • 30 ml fresh parsley
  • 4 slices of bread for dipping

  1. Take a skillet, melt the butter. Add chorizo, onion and garlic, sauté the mixture until the vegetables are soft and a little bit brown.

  2. Change the heat to low, add peppers and tomatoes. Simmer for 5 minutes, tomatoes should become juicy.

  3. Take a small bowl, whisk the eggs. The mixture should be very smooth, you shouldn't see the yolk parts in there. The mixture should be a little bit yellow.

  4. Put the heat on medium, the mixture should be bubbling. Add the eggs while mixing the tomatoes. Cook until eggs are set but still wet. The texture should be like a creamy soup.

  5. Remove the pan from heat, add parsley and serve hot with bread slices. This recipe isn't the best option for meal prep because the eggs won't be runny anymore.

Recipe Notes

You can peel the tomatoes quickly by cutting the cross in the bottom. Take a pan, add water, and bring it to boil. Boil the tomatoes for 10 minutes, they will become very soft. Remove the vegetables and rinse under cold water. You will be able to peel of the skin with no effort. Tomatoes will still be very delicious.
