Toaster oven breakfast eggs

This is a quick breakfast that you can quickly make in a toaster oven. This device is perfect for hot days when you don't want the house to heat up. You can get creative with the toppings and fillings. This recipe features my favorite ingredients. It's very fun to make and even more fun to eat.

  • 15 ml olive oil
  • 100 ml spinach
  • 50 ml mushrooms
  • 1 chopped onion
  • 50 ml sliced ham
  • 6 eggs
  • 15 ml milk
  • 5 ml salt
  • 5 ml pepper
  • 30 ml mozzarella cheese


  1. Take a skillet and heat olive oil over medium heat. Add onions and mushrooms, cook for 5 minutes. They should be tender, but not mushy. Add spinach and stir into the mixture. Cook for 2 minutes.

  2. Add the mixture into a ramekin and top with ham. Add eggs to the ramekin. You can use whole eggs or scrambled eggs. If you use uncooked eggs, the final meal will be more runny and creamy. 

  3. Preheat the toaster oven to 375F. Place the ramekin into the oven and toast for 15 minutes. The eggs should be set. Add cheese and return the ramekin to the oven until the cheese is melted. It usually takes 3-4 minutes. Serve immediately.
