potato hash in a mug

This is not only very satisfying but also very nutritious. You can quickly make a quality breakfast that will charge your body for the long day. The main benefit of the recipe is that you can meal prep. You can microwave it or just put hash in a toaster oven.

Here we use sweet potatoes because it’s quicker to cook them than other potatoes, but you can use any type that you have on hand. You can also use cooked potatoes which makes everything even faster. Use up your leftovers for an effortless meal.

This is perfect for breakfast but you can also use it for lunch or dinner as it’s very flavorful and can be cooked on spot at work. If you don’t like microwaving your food just cook these in the oven. This will take 5 extra minutes.

Cook Time 5 minutes
Total Time 12 minutes
Servings 2

  • 1 sweet potato
  • 500 ml water
  • 2 chopped peppers
  • 15 ml red onion
  • 30 ml grated cheese
  • 4 ml salt
  • 4 ml pepper
  • 30 ml dried rosemary
  • 4 ml melted butter

  1. Cut the potato in cubes. The smaller your cubes are, the faster everything will be cooked. Take a mug and cover with water. The water can bubble up in a microwave so be careful when taking it out.

  2. Put potatoes in a microwave until they're tender. Usually it takes 4 minutes. They should become orange. Check the potatoes with a knife, the texture should be very soft.

  3. Drain off the liquid, add all ingredients in a mug, and gently mix everything. Everything should be covered in sauce. Put the mug in the microwave, heat it for 50 seconds. The cheese will melt.

  4. Take out of the microwave and enjoy your filling meal!
