  • 1 pound chorizo without castings
  • 15 ml vegetable oil
  • 500 ml has browns, frozen and thawed
  • 12 eggs
  • 125 ml cream
  • 8 tortillas
  • 250 ml cheddar cheese
  • 4 ml salt
  • 4 ml pepper
  • 250 ml Monterey Jack cheese

For the topping:

  • 30 ml cilantro
  • 50 ml avocado
  • 15 ml hot sauce
  • 50 ml salsa


  1. Place a skillet on medium heat and add vegetable oil. Put the chorizo into the pan. Take a wooden spoon to break the meat apart. It should take around 10 minutes. Remove the chorizo from the heat and place on the counter to cool down.

  2. Add hash browns, season with salt and pepper. Cook for 8-10 minutes. Potatoes should become crisp and brown. Remove the mixture, clean the pan.

  3. Take a big bowl, crack eggs, add milk, season with salt and pepper and whisk everything together. Place the pan on a low heat and pour the mixture. Cook the scrambled eggs, stir them every minute. It should take around 7 minutes for eggs to cook. They should be a bit wet when you add the cheese. Set the mixture aside, clean the pan again.

  4. Now you should prepare the burritos. Layer the cheese, then chorizo, hash browns and eggs in the center of tortillas. Carefully flop the pieces of every tortilla over each other, do the same with the sides.

  5. Place burritos in the skillet and cook for two minutes. They should become crispy and brown. Serve with any topping you like.
