Sausage and egg casserole

The base of this flavorful casserole is split biscuits that add sweetness and softness to this quick casserole. You can use store-bought or homemade biscuits. I use Mexican-style blend of cheeses here, you can take Monterey Jack and Cheddar.

This is my go-to breakfast recipe. It’s really simple and uses frozen biscuits to save the time in the morning. Try it once, we promise your experience will be fabulous. Everyone loves this.

You can top the casserole with sausage gravy or salsa. You can make it for a Christmas morning for a big group of people. Prepare everything the night before for a quick meal.

Have you ever tried biscuits casserole? I'm sure most of you have at least heard of it. This is a simple recipe with cheese and eggs that is perfect for a lazy morning with your family. You can double the ingredients to serve the casserole to a big crowd. You can also make it a day in advance for no morning hassle.

  • 12 oz biscuit dough
  • 6 eggs
  • 1 package gravy mix
  • 1 lb sausage
  • 250 ml cheese
  • 125 ml milk
  • 4 ml salt
  • 4 ml pepper


  1. Preheat your oven to 350F. Take a pan and sprinkle it with oil. Take a skillet and cook the sausages according to package instructions.

  2. Cut biscuits into small cubes, layer on the bottom of the pan. Add cheese over sausages.

  3. Combine milk and eggs, add seasoning and pour over the sausages.

  4. Prepare gravy according to package instructions, add them to your casserole.

  5. Bake for 40 minutes. Biscuits should be cooked. Insert a wooden stick in the middle: if it's dry, the casserole is ready. Serve warm, refrigerate the leftovers.

Recipe Notes

If you want to prepare it a day in advance, you should increase the cooking time by 15 minutes. Just test the casserole after 40 minutes. You want to make sure that everything is cooked but not dry. If it takes too much time, cover with a foil to prevent it from browning and overcooking.
