Recipe for breakfast potatoes
Start your morning with these breakfast potatoes.
- 2 lbs chopped potatoes
- 6 slices cooked bacon
- 1 sliced onion
- 30 ml bacon grease
- 30 ml fresh rosemary
- 15 ml smoked paprika
- 8 ml thyme
- 15 ml salt
- 4 ml pepper
- 10 ml rosemary
- 10 ml thyme for garnish
Cook bacon according to instructions on the package, then put each slice on a paper towel to soak the extra grease.
Preheat the oven to 400F. Take a baking sheet and line it with paper. Take a big bowl, mix all the ingredients together, potatoes should be covered from all sides.
Put potatoes on a baking sheet, make only 1 layer. Bake for 40 minutes, toss them after first 20 minutes. Potatoes should become crispy and brown.
Top with fresh herbs and bacon, serve with your favorite sauce.
If you don't have bacon grease, you can use 30 ml olive oil.
