Oven Roasted Potatoes

Whether I make breakfast or snack, potatoes are always there. This variation of classical roasted potatoes are covered in melted cheese is bound to become your family’s favorite. They are very delicious and super easy to make. You can make a fancy breakfast with no effort.

Basically, you need to mix everything in a big bowl and put in the over until potatoes become soft and brown. The cheese will melt to make delicious sauce. What could be more perfect, than cheesy potatoes?

Roasted potatoes are a great breakfast dish or a side dish that will satisfy even the pickiest eaters. It contains lots of colorful vegetables and flavorful seasoning. I like to add a bit of spice but you can adjust the ingredients to your taste.

  • 2/5 pounds potatoes
  • 10 ml salt
  • 45 ml melted butter
  • 1 green pepper, chopped
  • 1 onion, chopped
  • 15 ml garlic, granulated
  • 15 ml thyme
  • 30 ml paprika
  • 40 ml creole cajun seasoning


  1. Preheat your oven to 425F. Prepare the potatoes, cut them into any shape you like. Don't make them too small, though. Put potatoes in a bowl. Add seasonings and oil. Mix ingredients together, every bit should be covered.

  2. Take a baking sheet, spread potatoes and bell peppers.

  3. Bake for 25 minutes, flip potatoes after 10 minutes. They should get crispy and brown. Serve hot.

Recipe Notes

Don't make potato cubes too small or they will be mushy and too soft. Serve them hot or they can get soggy when left longer. Don't put it in a fridge.

You can choose any type of potatoes, but we recommend Russets or Yukon potatoes. Russets are the crispiest one. They are very fluffy so it's our favorite. Experiment with potatoes to find your favorite option.

You should place a knife in the middle of a potato to make sure it's cooked. Dry potatoes well after washing them.
