Quick and easy potato casserole

This creamy casserole contains many tender vegetables, savory sausages and spicy cheese. If you have children, you can add greens and your children won’t know they are eating them. Casserole is one of my favorite dinner options because it satisfies everyone. I love this recipe because it’s very quick and easy to make, you can feed many people at once and make it in advance. The leftovers heat well.

My version of casserole is healthier than many other recipes. I use whole ingredients and it’s so much better than store-bought casseroles. If you have time, don’t use frozen hash browns and make your own. All you need to do is boil potatoes and mash them with a fork.

The casserole is very delicious and has no added sugar or preservatives. You can even make the sausages yourself! The recipe is very versatile so don’t be afraid to experiment with spices and fillings. It’s also better to shred cheese yourself rather than buy it in a store.

This is one of the easiest potato casseroles that you can meal prep the day before and eat when you're hungry. All you need is 10 minutes of your time and a delicious dinner is ready to serve.

  • 1 bag hash browns
  • 12 oz sausage rolls
  • 250 ml diced onion
  • 1 bell pepper, diced
  • 8 eggs
  • 15 ml salt
  • 12 oz milk
  • 375 ml cheddar cheese
  • 8 ml black pepper


  1. Preheat the oven to 350F. Break sausages into small pieces and put them in the pan. Add vegetables and cook for 5 minutes over medium heat. Sausages should be brown, make sure that vegetables stay soft, not mushy.

  2. Take a bowl and mix together milk and eggs. Add 250 ml of cheese and seasoning. Take a baking pan, spread hash browns. Top with sausages and egg mixture. Sprinkle with cheese, cover the casserole.

  3. Bake for 40 minutes. When the time is almost over, remove the cover and bake for 30 minutes until the top is bubbly.

Recipe Notes

If you meal prep this casserole, remove it from the fridge 10 minutes before cooking and place in the oven for 60 minutes.
