Traditionally on Memorial day, I and my family get together and prepare special foods. Being together with the dearest people, smelling delicious foods and hearing children playing is one of the best feeling I have. I usually don’t have any definite plans but I always think about foods that we will eat. If you’re searching for Memorial day dessert ideas, this list can give you some inspiration.

Thread 2 cubes of the cake and 3 strawberries onto every skewer, switching between cake and strawberries. Finish every piece with blueberries. Place the skewers on a platter and keep in a fridge until ready to enjoy.

All you need to do is to preheat the grill, cut potatoes in thick slices (I have a crinkle knife that makes everything fancy, but a regular knife is fine, too). Toss every piece with olive oil, add pepper and salt to taste. Lay potatoes on the grill and close the lid. One side takes around 10 minutes to cook; it should be golden. Just make sure it doesn’t burn and adjust the flame. Turn and cook on the other side. Potatoes should become tender. Piece one piece with the fork to check their doneness. They will stay crisp and brow on the outside but soft inside. Serve immediately.

Mediterranean Quinoa Salad

You can prepare something delicious on this special day: a protein packed salad with cucumbers, quinoa, olives, tomatoes, olive oil, red onion, fresh lemon and a little feta cheese combined with healthy salad is everything you need in a good side dish.

Rinse quinoa in clean water for 5 minutes and make sure the saponins are removed. Take a pit and fill it with water, add salt and quinoa and bring to boil. Then reduce the heat to low and simmer for 10-15 minutes. Remove the pot from heat and let it sit for 5 minutes. Fluff with the fork and put the mixture in a mixing bowl to cool. When the mixture cools, add olives, red onion, tomatoes and lemon juice to test. Add olive oil and feta, then salt and pepper to taste. Adjust the seasonings as needed. I like to add more lemon juice because it gives more depth to the salad.

It can be tricky sometimes to prepare a delicious dessert on a special day. Traveling somewhere with food, especially with a dessert, and arriving with it looking as delicious as at home can be challenging. This is why this dessert is so special: it’s not only delicious but also travels perfectly.

All you need to do is to melt 10 candy disks in the microwave. Stir the mixture and heat more if it doesn’t look like a thick sauce. Just make sure it’s completely smooth. Take a squeeze bottle and pour in melted chocolate. Place it in a fridge for 10 minutes. Remove the mixture from the fridge and pop stars. Take a small knife and clean up the edges to make it look fancier. You can make any shape you want, so don’t be afraid to experiment.

Transfer to the greased pan and make a thin layer. Refrigerate for at least 20 minutes (they taste better after 3 hours or so).

Transfer the treats to a cutting board. Take a serrated knife and make little squares. Scoop your favorite ice cream onto one half of the squares and spread evenly. Make sandwiches with other squares: just push ice cream out to the edges. Coat with strawberries and your favorite jam. Freeze for at least 4 hours.

Brownie ice cream sandwiches

This is a super easy dessert recipe that calls for coconut ice cream but any flavor will be amazing – strawberry, vanilla or pistachio are good options to try. Start by preheating the oven to 325F. Take a baking sheet and grease it with cooking spray. Line with parchment paper and leave a little overhand on both sides. Take a bowl and whisk together salt, flour and cocoa.

Microwave chocolate and butter in 30 increments until they make a thick sauce. Add in sugar. Whisk eggs until combined. Whisk in flour mixture until everything is combined. Transfer the mixture to the pan. Bake for 10 minutes or until the wooden pick inserted in the center comes out dry. Cool for an hour. Slice brownie in half while it is in the pan. Freeze until firm, it usually takes around 30 minutes. Remove one half and invert the other half in pan. Scoop ice cream onto the second half and top with the first half to create delicious sandwiches; gently press the halves together. Freeze for an hour and cut into 12 even sandwiches. You can go a bit fancy about the dessert, you can cover the edges with coconut flakes.

Rice crispy treats

You can honor the Memorial day by making little patriotic crispy treats. They are really easy to make and fun to eat. You need to melt marshmallows and butter together until they become a thick sauce, then separate the mixture into 3 bowls and add food coloring to 2 bowls (red and blue colors). Then you should add rice krispies and mix until combined. If you see that the marshmallows are too set, you can microwave them for 15 seconds until they re-melt. Take a pan and layer the treats. First you layer blue, then white, then red. Gently press the layers with a glass jar to make sure there is no air in between them.

It will be easier to keep the layers separated if you let each of it up set up in the fridge for around 15 minutes. After you’re done with the layers, you’ll let them sit for an hour or so. You can make them the night before because the flavors will mix together. When they are done, you place them onto wax paper and use a cookie cutter of any shape you have to cut them out. I had the star. It can be a bit of a challenge to get through the thicker layer but with a bit of effort you will get a colorful, delicious treat.
