The schnitzel comes from Wien and there, in Austria, it is made of veal usually, though any kind of meat is preferred in other countries. In Germany they cook the pork schnitzel. The composition of breading and technique of cooking are almost the same. The result must be with a crispy layer of breading and juicy meat under it. There are several official variations of a recipe and they are very delicious in their own little way but being serving plain it is more authentic.

It seems being like an American steak but there is a difference. It is more complicated, involving more steps and ingredients. First of all a fresh rather large boneless piece of meat is taken and tenderized. Then a mixture of flour, egg, and salt is used as a cover for the prepared slice, which is breaded into it. The meat is fried. That’s it!

  • 1 tsp caraway seeds
  • 1/4 cup red wine vinegar
  • salt
  • pepper
  • 1/2 piece small head red cabbage (cored and shredded)
  • 1/2 piece small red onion
  • 4 piece 5-ounce boneless pork chops
  • 1/4 cup flour
  • 2 piece large egg whites
  • 1 cup panko bread crumbs
  • 2 tbsp olive oil
  • 1/2 cup fresh dill (chopped)
  • Lemon, for serving


  1. Put a small pan over the medium heat and fry caraway seeds for 2 minutes, until you can smell their tasty fragrance.

  2. Take a large bowl and pour vinegar in it ad 1⁄8 teaspoon each pepper and salt. Add warm seeds, chopped cabbage and sliced onions. Toss and be sure the components are mixed properly.

  3. The pieces of pork should be covered with 1⁄4 teaspoon each salt and pepper and tenderized.

  4. Now take three separate small bowls and put the flour in the first, the egg whites in the second, the panko in the third.

  5. Take a piece of tenderized meat, dip it in flour, then in egg whites and finish with panko. Pay attention on even covering.

  6. Meanwhile the large nonstick skillet should be heated over medium. Add some oil in it and place all the schnitzels inside, cook for 3 minutes per side until they get golden brown and well cooked.

  7. Serve with sliced cabbage and lemon wedges.

Recipe Notes
