If there is something you need to know how to make is the emergency foods that come together in 5 minutes. It’s that recipe that you can make when you have nothing in your fridge and only 20 minutes before guests come for a dinner. This is the salad that can always save your life. Just look in a fridge and find tomatoes, cucumbers, some greens, cheese and onions and put them all together. Thanks to the dressing, you will get a delicious salad that might be your next favorite.

If you like Greek Salad and other light recipes, you will love this one as well. I add quinoa to make it more filling. The combination of tomatoes, cucumbers, feta cheese and red onions is incredible and delicious dressing is so good! This is a great side dish or a quick snack for those days when you don’t want to eat much.

This is a perfect example of a summer salad. It has many fresh ingredients, it takes 5 minutes to make and it tastes incredible. You can’t beat this combination and homemade dressing. And everyone in my house loves feta cheese, so we add it almost everywhere. I could eat this salad with every meal. You can even add chicken or pasta instead of quinoa.

So, is the dressing is something that can make the salad delicious or destroy all its flavors? I personally think that yes, it is the most important part of the salad. Of course, there are salads without a dressing but right now I’m looking at this recipe and it’s the dressing that I remember the most. So, make sure you do it yourself and don’t use store-bought options.

Whatever you think makes the salad special, I think we could agree that this recipe is a salad even though it doesn’t have lettuce. All you need is  tomatoes (you can use cherry tomatoes or anything you like), cucumber, feta cheese. Everything is finely sliced and put into a bowl. A beautiful salad to eat on any occasion.

This is a great idea for picnics, summer parties or dinners on summer evening when you don’t want to grill anything. All you need is 5 minutes of your time. You can even slice everything in advance and then combine the ingredients in one bowl. You can put everything together 2-3 hours before the servings and flavors will meld.

There is nothing not to like in this salad. There are only simple ingredients and a lot of flavor. And the best thing is that everyone can make it, even a child. It’s perfect for last minute dinners and potlucks with your family. I also love that it’s made of fresh ingredients, no chemicals or added sugars.

Everyone can make this salad with their eyes closed, it couldn’t be easier. Just make sure you don’t cut yourself while you’re preparing the vegetables. All you need to do is to add cucumber, tomato, feta cheese, quinoa and seasoning in one bowl and mix. Add salt and pepper and enjoy!

I was surprised to see that children love this salad as well. Last time my niece came to me to take a bite. And then she took another bite and then another bite. If your child doesn’t want to eat veggies, offer this salad. If you run out, you can always make more. This recipe is a basic idea that you can change to fit your preferences.

I think the reason why I talk so much about this salad is the flavors that are in there. I love tomatoes and feta, and I usually leave the skin on my cucumbers, but you can peel yours. Juicy vegetables always go together really well. Then salty quinoa and feta cheese. The dressing is really simple yet so delicious. Don’t let the simplicity fool you, this salad has a lot of flavor.

Quick and easy Feta salad

This is a very quick and easy recipe that comes together in 30 minutes. It tastes a bit like a Greek salad but has a more interesting texture and much better flavor. You can use it as the main meal or as a side dish with seafood or meat for a filling dinner.

  • 375 ml chicken or vegetable broth
  • 200 ml quinoa
  • 120 ml extra virgin olive oil
  • 2 cloves garlic, chopped
  • 15 ml red wine vinegar
  • 10 ml oregano, dried
  • 1 large tomato, cut into ½ inch cubes
  • 1 peeled and cut cucumber
  • 1 juiced lemon
  • 1/4 cup chopped red onion
  • 3 oz baby spinach
  • 1 oz crumbled feta cheese
  • 4 ml salt
  • 4 ml ground black pepper


  1. Take a deep pan, add rinsed quinoa (it should be dry). Add the meat broth, olive oil and salt. Boil everything and cook until quinoa is ready. All the liquid should be absorbed, it takes around 12 minutes.

  2. While the quinoa is getting ready, whisk vinegar with oil, oregano and garlic. When quinoa is ready, add this mixture and thoroughly toss. Add salt and pepper to taste, let it rest on a kitchen table.

  3. Take a new bowl, add tomatoes, cucumber, red onion and spinach. Take oil and lemon juice and drizzle the mix. Toss to combine, add salt and pepper. Finally, add quinoa and feta, gently toss a little bit. If the mixture is dry, add more of olive oil. Serve immediately.

Recipe Notes

You can easily meal prep this salad. This is one of my favorite tricks to eat healthy, delicious foods every day. Just prepare the components when you have time and freeze them. Assemble the salad when you're ready to eat. Take a few minutes to prepare the base and the whole salad will be ready in 5 minutes on a busy day.
