I honestly think that there is nothing better than homemade cookie dough that you can eat raw. They are one of my family’s favorite snacks and it comes together in no time at all! They are filled with chocolate chips as the main highlight of the sweet dough. You can add different kinds of chips or stick to traditional options. They are just irresistible and the flavor is so rich.

If you have more time, make little spheres and enjoy with your favorite drink. And if you don’t have time, eat the dough as is. Just tell everyone that the dessert is ready and enjoy it right from the bowl. I’ve made the bites many times and my family keeps asking for more. I promise that once you try them, you can’t stop eating them.

This is the version of the dough that you can make ahead and then enjoy on busy mornings. It's a great snack that you can eat raw and your children will love them. These little raw cookies go well with tea, coffee or milk. You need very simple ingredients and little time to prepare a dessert that everyone will live and crave for more. They are very healthy, good for your health and mood, and really delicious.

Ingredients

  • 130 g cashews
  • 6 g salt
  • 60 g gluten-free oats
  • 8 g cinnamon
  • 16 ml vanilla extract
  • 60 ml maple syrup
  • 60 g vegan chocolate chips you can substitute them for cacao nibs

Instructions

  1. Put parchment paper in a bowl or a container and let it wait for the cookies on the counter. Combine cinnamon, oats, cashews and salt in a food processor. Mix until the dough isn't wet and you can easily make round shapes. Don't over-press them or you will get butter instead of dough.

  2. Add vanilla extract and maple syrup to the mixture. Mix everything again, this stage usually takes 2 minutes.

  3. Remove the dough from the processor, place it in a bowl. You can get extra cookies if you scrape the knives of the processor. Make sure every piece of the dough has chocolate chips on it. You can always add more of them.

  4. Take a cookie baller (or 2 round spoons) and portion out the equal portions of the dough, you should get 12 edible cookies. Place the bites into the container. You can serve them immediately or freeze for later. They can stay in the freezer for 2 weeks.
