This is a filling breakfast panini with sausages, bacon, cheese and spices which is perfect for busy mornings. They are perfect for all occasions, you can make them for lunch or dinner. I enjoy it the most as a breakfast meal. You need very easy ingredients that you can find in your local grocery store. My family loves this recipe, they wake up the moment they smell the aroma of the panini.

If you don’t eat meat or want something light in the morning, you can take mushrooms, vegetables and eggs to make the panini. I can recommend bell peppers and spinach. There recipe is very versatile and you can use ingredients that make you and your family happy in the morning.

This recipe is an easy way to make your morning better. Several types of cheese, vegetables, savory bacon and sausages go really well together. Try this hearty and tasty breakfast panini that will give you enough energy to stay active until lunch time. it only takes 25 minutes of your time.

  • 2 pita breads
  • 1120 ml pesto
  • 2 scrambled eggs
  • 225 ml cheddar cheese
  • 225 ml Monterey Jack cheese
  • 225 ml mozzarella cheese
  • 1 pork sausage patty
  • 2 bacon strips
  • 80 ml red pepper, roasted
  • 30 ml melted butter
  • 2 chopped green onions


  1. Take a skillet, add bacon and sauté for 5 minutes. The bacon should release fat and sizzle. Cook it from both sides until it becomes brown. It should be released easily from the skillet. Make sure it's cooked evenly, the take a plate, put the bacon on it and cover with a paper towel.

  2. Prepare the eggs. Take another skillet, spray it with a cooking spray and place over medium heat. Take a bowl, crack the eggs, add pepper, milk and salt. Beat the mixture, it should be consistent. Pour eggs into the hot skillet and run a spatula until the eggs clump. The spatula should leave a train on the skillet. Gently fold eggs on a low heat and cook until ready. The eggs should be a bit wet, but not runny. Take another bowl, transfer eggs to it and let them cool down for 10 minutes.

  3. Prepare the sausages. Heat the patties in the microwave or cook until ready according to the instructions on the package. Chop the patties in cubes. You can pan fry them or cook them in the oven, but it will take more time.

  4. Finally, make the panini. Take pita bread, heat it in the microwave for 30 seconds. They should become softer. Take one pita bread, spread pesto over one side. Add cheese, scrambled eggs, sausages, bacon, peppers. Fold it to make a panini and gently press the sides together. Brush one side with melted butter. Repeat for another pita. Serve immediately.

If you want to meal prep this recipe, cook the components except the eggs and keep them in the fridge. When you're ready to eat, cook the eggs and make panini.
