- 12 oz cooked bacon, divided
- 5 large eggs, boiled and sliced
- 9 oz baby spinach
- 1 cup shredded Swiss cheese

- 6 oz sliced mushrooms
- 2.5 cups croutons
- 3 tbsp bacon drippings
- 2 tbsp olive oil
- 1/3 cup red wine vinegar
- 1 tbsp honey
- 1 tbsp Dijon mustard
