Pumpkin Ricotta Pasta Casserole

Everyone loves a delicious casserole. The main idea is to make it tasty and not boring to eat. No more goopy messes that you can sometimes see as a casserole. This version is very fresh and has a really fun texture. Take your favorite pasta, one pumpkin, a bit of cheese, herbs and you have a bubbly, hot, fragrant and flavorful casserole for your dinner with family and friends.

This casserole has all elements that I love in this dish. The flavor of cheese isn’t overwhelming; ricotta and Parmesan makes the casserole creamy but not too heavy or gooey. It’s very rich, thanks to the amazing taste of the pumpkin. It also has a bit of crunch from the nuts and healthy proteins from eggs. Sage and garlic add depth to the flavor, and a pinch of other spices make the casserole complete.

Pumpkin & Ricotta Pasta Casserole

Ingredients

  • 13 oz pasta of choice, I use rotini
  • 225 ml pumpkin, pureed
  • 450 ml ricotta
  • 225 ml Parmesan cheese, grated
  • 8 ml saigon cinnamon
  • 5 ml spiced sea salt
  • 4 ml sea salt
  • 3 ml ground pepper
  • 125 ml chicken broth

For the topping:

  • 60 ml almonds, chopped
  • 125 ml panko
  • 60 ml Parmesan cheese
  • 5 ml spiced sea salt
  • 15 ml butter

Instructions

  1. Preheat the oven to 375F. Take a baking dish, grease it with butter and set aside. Cook the pasta according to directions on the package, drain.

  2. Take a big mixing bowl, add all ingredients except pasta and ingredients for the topping. Taste for seasoning, add salt and other spices and needed.

  3. Add pasta to the mixture, take a spatula and combine the ingredients together. Pour into the baking dish. Take another bowl, combine the ingredients for the topping. Combine with a spatula, sprinkle the topping over pasta.

  4. Bake in 375F oven for 20 minutes. The topping should be brown. Serve hot or refrigerate for 5 days.
