This is a quick and easy version of a casserole that you can make ahead in the evening and then heated in a microwave in the morning. Onions, peppers and other ingredients are layered with bread and egg mixture. This is a great meal idea to prepare on holidays or free mornings for your family and guests.

My family loves breakfast casseroles and I like that I can serve them for a big group of people. When there are only 4 of us at home, making it means making several meals and freezing the leftovers. You can eat them later in the day or the next morning.

This is a warm, simple dish with vegetables and potatoes, bacon and tons of flavor. It can be easily changes for vegetarians with more vegetables instead of bacon. In this recipe, I will show you the cooking method that I love the most.

This is a warm overnight casserole that can please even the pickiest eaters. It can be served for breakfast, lunch or brunch. It can be made one day in advance, and contains the best ingredients in the world - bacon, eggs and cheese.

  • 12 slices of bread, cubed
  • 0.5 lbs bacon, sliced
  • 8 eggs
  • 375 ml milk
  • 250 ml cheddar
  • 4 ml black pepper
  • 4 ml salt
  • 2 green onions, sliced


  1. Take a pan and grease it with oil. Layer bread cubes. Take a skillet, cook the bacon, it should become brown. Remove the skillet, discharge extra bacon fat, let the bacon sit for 5 minutes. It should be warm, not hot.

  2. Take a big bowl, add eggs, pepper, cheese and salt. Add bacon when it's cooled down.

  3. Pour the mixture over bread cubes. Every cube should be covered with egg mixture. Press the bread into the mixture until everything is sitting in the liquid.

  4. Cover the bowl with a foil and let it sit on a kitchen table for 25 minutes. It can spend the whole night in a fridge, the taste will be even better.

  5. When you're ready to cook the dish, preheat the oven to 350F. Bake it for 40 minutes, the middle of casserole should be set. The top will become browned. Take a toothpick and insert it in the middle. It should be clean and not moist. If not, cover the casserole with the foil and wait for 5-10 minutes, the n repeat the test.

  6. Take the casserole from the oven and let it cool for 5 minutes. Garnish with onions and serve warm with fresh juice.
