Baguette with Apricots

I’m collecting recipes of vegetarian food, and this one literally made my day as it is so perfect in simplicity plus it is totally vegetarian. All you need is just a French baguette, few dried fruits like apricots and eggs. Apricots could be replaced with dried prunes.

It is really delicious, but to be honest one serving is really not that much (although it depends on how you slice the baguette), so I usually cook 2 servings for myself. This gives me enough energy to get to lunch time.

Egg-Topped Baguette with Apricots.

  • 2 slices baguette
  • 1 egg
  • 4 dried apricots


  1. Put eggs into the pot, add 1 tablespoon of salt (not accounted for in the ingredients section as it is mostly for easier peeling)

  2. Bring to boiling, switch to medium and cook for 4 minutes

  3. Put the eggs under the cold stream of water in the sink, keep them there for 4-5 minutes

  4. Peel eggs and slice them

  5. Cut baguette in diagonal slices, you will need two 

  6. Place the egg on top of the bread, and place apricots on the top of the egg
