Ingredients

  • 2 cloves diced garlic
  • 1 red pepper sliced (seeds are taken out)
  • 2 cups chopped mushrooms
  • 2 cups chopped fresh kale
  • 3 eggs
  • 1 tbsp olive oil
  • 1/2 medium onion sliced

Instructions

  1. Put oil onto the pan (no plastic handles as it will go into the oven at the last step), then onions, 1/2 teaspoon salt. In 3 minutes add mushrooms and garlic. Сook for 5 more minutes

  2. Pre-heat oven to 360 (F) degrees

  3. Add red pepper slices and kale, cook it for 5 minutes

  4. Make several dents in kale with a spoon, add cracked egg into each dent

  5. Place the pan into the oven for 3 more minutes
