Bread and egg scramble has everything you need for a brilliant breakfast. There are many different ways of cooking this bread and this recipe is our version of making it. We used eggs and spices to give bread a nice thick coating and make everything else get bound to the bread.
We added random vegetables to this bread, you can use anything you can find at home: beans, carrots, greens or peppers. The recipe is customizable to your specific taste, you add any spices in the mixture and coat bread with it. If you have little children, you will easily feed them with vegetables. Adults love the combination of spices and textures, too!
Indian style bread and egg scrambles
This masala toast is a perfect breakfast idea for a quick morning snack. It's like a savory version of a classical French toast. The bread is dipped is a delicious egg mixture and fried on a pan with oil.
- 3 average bread slices
- 2 medium eggs
- 15 ml garlic paste
- 8 ml turmeric powder
- 30 ml coriander leaves, chopped
- 15 ml pepper, crushed
- 2 ml cumin powder
- 2 ml garam masala
- 1 chopped green chili
- 8 ml chili powder
- 45 ml milk
- 1/8 tbsp salt
- 15 ml olive oil
- 15 ml chopped mint leaves
- 30 ml chopped onions
- 30 ml chopped bell peppers
- 30 ml chopped tomatoes
Chop all the vegetables on a chopping board, make sure to chop finely or they won't mix well with eggs. Pre-heat the pan.
Break the eggs in a medium bowl, add all the ingredients. Beat it until everything is finely mixed. Let it sit for 2 minutes, whisk again for a minute.
Cut the bread into triangles. Add olive oil to the pan, dip bread slices into the mixture and put on a pan. Wait for a minute.
One side of the bread is ready when it looks brown. Sprinkle more oil on the pan and cook the other side. Serve immediately with fresh juice or smoothie.
If you have children or don't like spice food, don't put chili and chili powder. You can substitute them for your favorite vegetables.
