Yes, this recipe is about adding raw dough to your ice cream! And it tastes so delicious. But wait, don’t run away. This dough is safe to eat. There are no raw eggs and it’s much better than the dough you have when you bake chocolate cookies.

The key to this delicious ice cream treat is to make a killer chocolate cookie dough. I love to experiment with foods and I try to get the best mix of flavors even when I only use simple ingredients. When I was younger, I used to eat raw dough with eggs but I know it’s no good. Then I came up with this recipe.

One day I was making chocolate cookies and I found I couldn’t stop eating the dough. And when my boyfriend came, he took a bite, and then another bite… This is when I realized I need this recipe and started my research. I have tried many recipes that require different ingredients and found that I like this recipe the most. You can use any ice cream flavor you like. My favorite is vanilla but it also goes great with chocolate and almond ice cream.

So, I needed a cookie dough that doesn’t contain eggs but has a chewy texture and didn’t fall apart when you take it. Why are eggs a key ingredient in many recipes? Basically, they keep other ingredients together. When it comes to cookie dough, though, there are other way to keep everything together. You only need a liquid ingredient to substitute eggs. Milk is the easiest one but not the only option. Adding a little bit of milk keeps everything together. I recommend you using your hands and press the dough together. You can also wrap the dough in saran wrap.

Oh, and I’m always get a little bit impatient when I wait for my cookie dough ice cream to freeze. The longer you wait the better the texture will be, but I just take it out half way through the freezing process because it’s so delicious. The ice cream is melty but I’m totally fine with that because the taste is amazing. If you have more patience than me (20 minutes is enough), you can eat harden ice cream with the dough and enjoy it to the fullest. It also looks better on pictures when it’s frozen.

Making homemade ice cream is much easier than it sounds and it require only basic ingredients. Most likely you already have some of them in your fridge. If you were to check my fridge, you will see that I have different types of milk, buts and vegetables. I use them all for my desserts and last-minute recipes.

In addition to using only simple ingredients, this cookie dough ice cream is incredibly quick to make. All you need is to combine everything together and then chill the butter in the freezer. Whipping up the dough takes 5 minutes. And it’s worth your time, you can trust me on that.

This recipe is made of sugar, salt, vanilla, flour, chocolate and milk. There are some other ingredients but this is the base. Baking soda isn’t necessary because we don’t bake anything. The whole process takes 5 minutes. I believe you should chill the dough in the freezer but if you don’t have time, just skip this step. You can add the dough to the ice cream when it’s frozen (or half frozen).

For the dough:

  • 60 g soft butter
  • 60 g brown sugar
  • 30 g white sugar
  • 10 ml vanilla
  • 20 ml milk
  • 5 g salt
  • 100 g flour
  • 50 g chocolate chips

For the ice cream:

  • 1 can sweetened condensed milk
  • 30 ml vanilla extract
  • 260 g whipping cream
  • 50 g chocolate chips


  1. Start by making the dough. Place sugars and butter in a bowl and mix everything together with a mixer. Add milk and vanilla, stir with a spatula. Add flour and salt, combine everything together. Slowly add more flour to get the texture of the dough.

  2. Spread the dough out on a flat surface, the layer should be 1 inch thin. Place the dough in a freezer for 25 minutes, then chop into small pieces.

  3. Finally, make the ice cream. Take condensed milk and vanilla and combine them in a bowl. Take another bowl and whip heavy cream for 5 minutes until you can see peaks.

  4. Pour the cream into the milk, take a pan and pour the mixture into it. Sprinkle the dough on top of the mixture. Stir the mixture with the spatula, the chips should be spread throughout the mixture. If you feel that you need more chocolate chips, feel free to add them.

  5. Cover the ice cream with the foil and place in the freezer for 4 hours. It gets even tastier if you meal prep the dessert and eat it next morning.

Recipe Notes

Once you're done with your ice cream, you can put it in a container and freeze. It can stay there for a week or two. I'm always happy to have my dinner when I know my ice cream with cookie dough is waiting for me there. If you love chocolate, and you're the one who always eats ice cream, this is the perfect recipe for you. This is the best option for summer but you can make it any time you like.

Even if you're dairy-free, you can use this recipe as the main idea and substitute some products to fit your preferences. You can put ice cream in a cone and serve it for a family party or gathering. Everyone will eat at least two cones!
