I like the cakes for breakfast. First of all, I can eat them without worrying about my weight as far as all foods consumed by afternoon are digested easily and do not turn to excess pounds. Secondly, I am fond of sweet bakery foods especially with a lot of berries. Thus, I prepare the pie I’m going to describe rather often.

Though, the dietary experts insist that cakes are bad for the figure, I’m sure that one piece of homemade pie eaten in the morning will never do harm. Instead of it you can count on sufficient nutrition and complete happiness. There are even health benefits. The cakes are packed with carbohydrates and proteins, as far as they consist of flour. These elements provide you with energy. The fiber will help digestion and other ingredients will fill you up with vitamins and microelements. Moreover, when you eat a piece of cake for your breakfast, you boost your metabolism and get slimmer.

And what about happiness? If the recipe includes chocolate, nuts, or berries, the cake will certainly increase the serotonin and endorphin levels. It will help to cheer up and make you joyful. You will forget about ill humor and hunger in addition. The fats and oils in the cake provide you with energy needed for a good start of a day.

Now I want to offer you a cake with blueberries, which are rich in vitamin C, B6, K, manganese and fiber. But almost the most attractive component is antioxidants being extremely useful. They protect us from damage by free radicals, and as a result help to stay young and healthy. They contribute to prevent diseases like cancer too. And I have found the fact that blueberries are considered to have the highest amount of antioxidants compared to all commonly consumed fruits and vegies.

And this breakfast cake is full of blueberries. I put them even more than the recipe requires – adore it. Another good news that it does not take a lot of time to cook this cake. The recipe is extremely easy and fast. Forget about those store-bought cakes and follow my experience. I spend a half an hour for preparation and get the perfect breakfast any time I want to have some tasty things with a cup of coffee in the morning! Of course, when you suffer from lack of time this is not the best way to have a bite but at the week-ends you can apply it.


As a lot of other recipes it demands the hot oven that is why do not forget to switch it on while you prepare the batter. First, I mix butter and sugar in a large vessel using a mixer. After approximately five minutes of whisking I get the beautiful fluffy cream. I add some lemon zest, vanilla and stir again. Now I beat eggs in a clean vessel to make sure that they are not spoiled and beat them for a minute. Here the high time to add the berries but I prefer to put them when all ingredients are mixed, that is why I put the flour with salt and baking powder to the eggs, mix to get the smooth mass. And only now I add blueberries whisking for another minute with care in order not to crush them. Now I combine two parts of the batter: the sweet creamy butter and beaten eggs with berries.

For baking a choose a rectangular baking pan, but you can take a round one – it does not matter. I prefer greasing the bottom with butter because do not like non-stick spray. At last I pour the batter into a pan and sprinkle it with sugar crystals. It will take about half an hour to bake the cake. But keep it under control.

It proves to be very tasty when it gets cool for fifteen minutes. Enjoy!

  • 125 ml butter
  • 30 ml lemon zest
  • 200 ml sugar
  • 1 egg
  • 8 ml vanilla
  • 450 ml flour
  • 15 ml baking powder
  • 8 ml salt
  • 500 ml blueberries
  • 125 ml buttermilk


  1. Preheat the oven to 350F. Take a bowl and cream butter with sugar and lemon zest. The mixture will be fluffy and light. Add vanilla and the egg and beat for a minute. Add the blueberries and 60 ml flour, whisk for a minute. Add the rest of the flour, salt and baking powder.

  2. Add the mixture to the butter, fold in the blueberries. Take a baking pan, grease it with butter or non-stick spray. Sprinkle batter with sugar. Bake the pie for 35 minutes. Make a toothpick test: insert it in the middle of the pie, the toothpick should be clean. Let it cool for 15 minutes. You can leave it in a fridge for 8 hours.

You can turn to this recipe when you prepare a holiday dinner for your guests and looking for a simple but delicious dessert. The cake will be moist enough due to juicy blueberries, which you can replace with fruits, if you want. Here the cherries and raspberries will be very good.
