Ingredients

  • 125 ml butter
  • 30 ml lemon zest
  • 200 ml sugar
  • 1 egg
  • 8 ml vanilla
  • 450 ml flour
  • 15 ml baking powder
  • 8 ml salt
  • 500 ml blueberries
  • 125 ml buttermilk

Instructions

  1. Preheat the oven to 350F. Take a bowl and cream butter with sugar and lemon zest. The mixture will be fluffy and light. Add vanilla and the egg and beat for a minute. Add the blueberries and 60 ml flour, whisk for a minute. Add the rest of the flour, salt and baking powder.

  2. Add the mixture to the butter, fold in the blueberries. Take a baking pan, grease it with butter or non-stick spray. Sprinkle batter with sugar. Bake the pie for 35 minutes. Make a toothpick test: insert it in the middle of the pie, the toothpick should be clean. Let it cool for 15 minutes. You can leave it in a fridge for 8 hours.
