Bananas are one of our favorite fruits. My family loves them as well, so we often have them at home. They have a really good texture and flavor, they go well with many ingredients, and they’re especially good in this banana foster cheesecake. If you haven’t tried foster cakes yet, you should definitely give a try to this recipe.

This is one of the best cheesecakes I’ve ever made and I have prepared a lot of them. It gets even better after one night. Your family will try to eat every single piece of the cake but it is very filling, so you will probably have leftovers. It’s a perfect morning tread or a great side dish.

If you like bananas, caramel and cheesecake texture, you should definitely prepare this one. You can also experiment with sweetness, I love sweet cheesecakes, so there are a lot of sweeteners.

Homemade banana foster cheesecake

This is a beautiful cheesecake that is perfect for holidays. It looks very festive and not like a regular cheesecakes. The tastes are more interesting, too. It has unbeatable banana flavor with caramel topping with cinnamon that goes really well with cream cheese.

For the crust:

  • 200 g graham crackers crushed
  • 60 g brown sugar
  • 100 ml melted butter
  • 20 ml vanilla

For the foster:

  • 3 sliced bananas
  • 60 g butter
  • 50 g sugar
  • 30 ml rum
  • 60 ml liqueur
  • 3 packs cream cheese
  • 100 g bananas foster
  • 60 g sour cream
  • 2 eggs
  • 20 ml vanilla extract
  • 50 g corn starch
  • 100 g brown sugar

For the topping:

  • 3 sliced bananas
  • 50 ml butter
  • 30 g brown sugar
  • 50 ml rum
  • 70 ml banana liqueur


  1. Take a spring form, grease it and set aside. Preheat your oven to 325F. For the crust, crush crackers or buy cracker crumbs in a store. Mix vanilla, butter and sugar, stir until smooth. Add crackers into the pan, gently press and spread evenly.

  2. For the foster, take a pan, melt butter, add sugar and still until you can't see the sugar anymore. Add bananas, sauté the mixture for a minute. Add liquor, sauté for 4 minutes. Don't let the mixture burn, stir it very often. Take bananas, let them cool and spread over the crust. The juice should cool down.

  3. For the cake, beat sugar and cream cheese in a mixer for 2 minutes or until everything is smooth. Add eggs, mixing the mixture after every egg. Add starch, sour cream, sauce and sour cream. All ingredients should be combined.

  4. Pour the batter into the crust and spread evenly. Bake for 50 minutes, then let it cool down. 

  5. Finally, make the topping by taking a pan and melting butter. Add sugar and stir until everything is smooth. Add bananas, sauté for 60 seconds. Add liquor and rum, sauté for 3 minutes. Pour the topping over the cheesecake, let it rest for 1 hour.
