flapjacks banana

Although flapjacks are chewy and delicious the ones that are sold (vs. homemade) might have some room for improvement especially in terms of having less sugar and also some ingredients could be replaced with a healthier one. For instance, sugar can be replaced with honey. Butter could be replaced with a lighter version containing less fat. There might be more ideas, and I believe this version of recipe has a very nice balance of taste and healthiness.

  • 1 cup mashed banana (peeled)
  • 2 eggs
  • 1/4 cup butter
  • 2 cups flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1/4 cup buttermilk
  • 1/2 cup chopped toasted pecans
  • 3 tbsp brown sugar
  • 1/2 tsp baking powder


  1. Mix pecans, flour, baking soda and powder, salt in a big bowl 

  2. In smaller bowl stir banana, eggs, and butter

  3. Place the content of smaller bowl into the big one 

  4. Heat the pan and drop some oil onto it

  5. Use a ½ cup of the batter for each piece

  6. Cook for 3 minutes or less in case of dry edges

  7. Turn and cook for another 2 minutes
