So, let’s introduce a little variety in your everyday meal. What do you think of healthy crockpot dinner recipes? Do you agree that they are easy and without risk to lose? Try this one and see for yourself!

The key component here is orzo. This is kind of pasta looking like a rice. It is produced in various colors and can be served by itself as risotto for example, or the dish can be garnished with it, or it can be used as an ingredient of soup. Almost any combination will work perfectly.

It is decorative, unusual, cooked quickly but at the same time it contains the healthy minerals peculiar to wheat grain. You can find something alike in Greek cuisine called kritharáki, in Turkish one known as barley noodle, there are also analogues in Arabia and Spain. So it is widely spread but not often used.

We try to fill a vacuum and cook the soup with it. Italians add it to Minestrone – their branded soup but we are going to consider the other version.

Recipe Notes

That’s it! Perhaps it takes a lot of time but is not difficult and very delicious. You can freeze the soup at the stage before adding snap peas and fresh dill for serving and use it during 3 months. In order to prepare it for serving you should thaw the portion in the fridge during the night. Then put it into a pan and heat it for about 5 minutes. You are free to add the peas.
