Healthy Crockpot Dinner Recipes: Soup with Orzo
This time we offer you a hearty and healthy soup with orzo cooked in a crockpot. Being simple and nutritious it will diversify your menu. And chicken meat will make it extremely filling. It is flavored with lemon and tastes in a particular way.
- 1 piece bone-in chicken breast
- 4 piece carrots
- 1 piece onion (medium size)
- 1 piece lemon
- 4 piece fresh dill (a sprig of it)
- 4 piece fresh parsley (a sprig of it)
- 4 cup broth made of chicken
- 2 piece stalk celery
- 3/4 cup orzo
- 8 oz. snap peas
It goes without saying that you should have a slow cooker with a capacity of 5 or 6 quart.
Put the vegetables including carrots, onion, then cut chicken and sliced lemon in it.
Now you should tie sprigs of parsley and dill together using kitchen twine and add it to cooker.
Pour the broth and 2 cups of water to the slow cooker and switch it on.
Boil during about 7 hours. The chicken should be cooked through and you understand it when the meat is easily shredded. You can cook over the high heat in order to reduce time to 4 hours.
When only half an hour is left before serving, take out the chicken, carrots, lemon, herbs and onion and strain the broth returning it to the slow cooker again.
Now take the celery, cut into small pieces and put it into the slow cooker.
Add the orzo to the broth. And cook these two components over high heat for about 25 minutes when the orzo it is well cooked.
Meanwhile the chicken should be shredded into large pieces without bones.
The carrots should be cut into rounds and onion should be chopped into small pieces with use of a knife on a cutting board.
Add the chicken, carrots, onion and snap peas to the slow cooker with soup and boil for 3 minutes.
That’s it! Perhaps it takes a lot of time but is not difficult and very delicious. You can freeze the soup at the stage before adding snap peas and fresh dill for serving and use it during 3 months. In order to prepare it for serving you should thaw the portion in the fridge during the night. Then put it into a pan and heat it for about 5 minutes. You are free to add the peas.
