Ingredients

  • 3 piece chicken breasts
  • 1 tbsp olive oil
  • 3 tbsp butter
  • 1/2 pound button mushrooms (about 17 mushrooms)
  • 3 piece leeks
  • 1/3 cup white wine
  • 1 cup cream
  • salt and black pepper

Instructions

  1. First of all prepare the chicken breasts as we described before making them thinner. You’ll need a very sharp knife cutting the piece lengthwise in two parts – that is enough though if you want, you can make three cutlets. 

  2. Take salt and black pepper (it is better to ground it just before applying) and rub the chicken with them properly.

  3. Put a large frying pan over medium high heat, pour a half of tablespoon of olive oil and add the same amount of butter which should be melted only then you can put the chicken breasts into it.

  4. Cook the pieces from one side for about 4 minutes until the chicken appears to be cooked through. 

  5. Turn over the chicken using tongs or just fork only once. Ensure that it is browned and continue cooking for 4 minutes more. 

  6. Take a plate and transfer the prepared meat to it, covering with aluminum foil in order it does not get cold.

  7. If chicken breasts are left, clean the frying pan and again add butter and olive oil, continue cooking.

  8. When all the chicken is ready, take a skillet, put it over medium heat and add a tablespoon of the butter.

  9. Take the mushrooms, clean gently and put into the skillet and sprinkle them with salt and leeks. The leeks should be sliced into rounds including light green and white parts. Cook during about 5 minutes and stir from to time preventing burning. The mushrooms and leeks should be soft. 

  10. Take the wine and pour into skillet, continue cooking for two minutes.

  11. Now put the cream into the mix and increase the heat to medium high. Stew during 5 minutes and stir in a tablespoon of butter left. 

  12. Add salt if it is needed.

  13. To finish put the chicken breasts into the skillet and pour the sauce on the tip of it.

  14. Serve warm.
