For those who prefer the chicken breasts it is probably the new way to diverse the menu as far as a wide-known ingredient becomes completely new in this environment.

If you add a lot of mushrooms to the dish, you will enjoy it twice due to favorite consistency and aroma of the additional component. You can choose any mushrooms but find with the most intensive flavor.

The chicken breasts should be boneless and skinless and cut into two slices. It is important to make them thinner in order to reduce cooking time. And remember the creamy sauce should be really creamy if you want to get the authentic taste.

As to the mushrooms they are extremely good for you. They are considered to be vegetables though this is not the exact classification. Still they are full of health benefits. You can find different kinds of mushrooms in your grocery store but the button ones are probably the most popular. They reduce risk of a range of conditions, diabetes and heart disorders are among them. There are a lot of antioxidants getting rid of free radicals. They contains vitamin D, C, folate, potassium and other nutrients.

  • 3 piece chicken breasts
  • 1 tbsp olive oil
  • 3 tbsp butter
  • 1/2 pound button mushrooms (about 17 mushrooms)
  • 3 piece leeks
  • 1/3 cup white wine
  • 1 cup cream
  • salt and black pepper


  1. First of all prepare the chicken breasts as we described before making them thinner. You’ll need a very sharp knife cutting the piece lengthwise in two parts – that is enough though if you want, you can make three cutlets. 

  2. Take salt and black pepper (it is better to ground it just before applying) and rub the chicken with them properly.

  3. Put a large frying pan over medium high heat, pour a half of tablespoon of olive oil and add the same amount of butter which should be melted only then you can put the chicken breasts into it.

  4. Cook the pieces from one side for about 4 minutes until the chicken appears to be cooked through. 

  5. Turn over the chicken using tongs or just fork only once. Ensure that it is browned and continue cooking for 4 minutes more. 

  6. Take a plate and transfer the prepared meat to it, covering with aluminum foil in order it does not get cold.

  7. If chicken breasts are left, clean the frying pan and again add butter and olive oil, continue cooking.

  8. When all the chicken is ready, take a skillet, put it over medium heat and add a tablespoon of the butter.

  9. Take the mushrooms, clean gently and put into the skillet and sprinkle them with salt and leeks. The leeks should be sliced into rounds including light green and white parts. Cook during about 5 minutes and stir from to time preventing burning. The mushrooms and leeks should be soft. 

  10. Take the wine and pour into skillet, continue cooking for two minutes.

  11. Now put the cream into the mix and increase the heat to medium high. Stew during 5 minutes and stir in a tablespoon of butter left. 

  12. Add salt if it is needed.

  13. To finish put the chicken breasts into the skillet and pour the sauce on the tip of it.

  14. Serve warm.
