  • 1 medium Avocado
  • 2 eggs
  • 1 cooked bacon (crumbled)
  • 1 tbsp low-fat cheese
  • 1 pinch salt


  1. First you should preheat oven to 425 degrees F.

  2. Meanwhile start preparing your avocado. You should wash it and cut in half removing the pit.
  3. Take a spoon and help yourself to scoop out some flesh out of the half of avocado in order to arrange more place for egg you are going to put there.

  4. For cooking you can use a muffin pan or any other baking pan if you are able to keep the avocado stable in it.

  5. Now crack the eggs into a hollow of each half. 

  6. Sprinkle a little cheese and cooked bacon on the top. If you have salted bacon, take a frying pan, put it over heat and place the bacon slices into it cooking them until they become crunchy.

  7. Season with a pinch of salt.

  8. Cook during 15 minutes waiting the eggs set. Serve warm.
