- 4 chicken breasts, boneless and skinless
- 5 ml salt
- 5 ml black pepper
- 60 ml flour
- 2 eggs
- 225 ml panko bread crumbs
- 125 ml parmesan cheese, grated
- 30 ml olive oil
- 30 ml butter
- 225 ml marinara sauce
- 125 ml mozzarella cheese, shredded
- 125 ml provolone cheese, shredded
Preheat the oven to 375F. Put the chicken breasts between 2 piece of parchment paper. Take a rolling pin and flatten the chicken to ½ inch thickness. Season with salt and pepper.
Take a bowl and add flour. Take the other bowl and add eggs, beat them until combined. Take the third bowl and combine parmesan cheese and panko bread crumbs. Put the chicken into flour, then eggs and then panko mixture. Take a skillet, place it over medium heat, add butter and olive oil.
Cook the chicken for 4 minutes on every side or until golden. It should be raw inside and crispy outside. Add the chicken to a baking sheet, add the sauce on top and sprinkle with the cheeses. Cook for 20 minutes. Serve immediately.
