Being a young woman I do keep my figure that is why I usually refuse of fatty and fried foods but when I have tried the Gordon Ramsay’s hash browns I have lost my head. Really, this is something unusual.

It was last winter when visiting my friend, I agreed to dinner eating this dish. I’m sure you know the potatoes pancakes which are completely in the style of American style breakfast. But are you familiar with the version suggested by Gordon Ramsay?

I do like his shows and this famous recipe is one of my favorable. Telling straight off, the hack is to add some grated cheese. And if you afford eating the caramelized bacon, you will be impressed, I promise! You will forget about your diet! It is mouthwatering. So be careful with this recipe! If you want to manage your weight and at the same time enjoy the dish which I am going to offer you below, just eat it for breakfast only and in moderate quantity of course. Never include it in your dinner menu.

What else impresses in this recipe? The dish is rather popular though it seems to me that it is rather difficult to amaze the lovers of culinary with potatoes and eggs. Nowadays there are so many concoctions through the Internet that every day you can cook a new dish and that will never come to end. Just imagine! Gordon Ramsay managed to catch the attention of the whole world when he first offered his version of well-known meal.

Why do I like it? This variant of hash browns tastes savory and at the same time you will find some sweet shades here. The soft yolks and crispy bacon – those contrasts make the dish interesting. Of course, smoothie for breakfast takes you much less time but it is definitely worth your efforts.

As to the hash browns. If I have time, I do it myself. If I am in a hurry and have a package of the store-bought ones, I agree to use them. But the best solution is to prepare intermediate hash browns at home and freeze them. Then you will be sure to have the dough you like and the cooking process will take you about half an hour – twice as little compared to the complete process.

But now I want you to understand how to create the best dish ever for breakfast by your own hands.

First, I peel potatoes, onion, and grate them. You know, the size of a grater does matter in this case. You can apply fine or large one but I prefer to feel the parts of potatoes when it is cooked. That is why shredding with blender is not always good for me, but you can follow the recipe and get the completely fine puree. Or divide vegetables, shredding onion and grating the potatoes, further combine them and stir with accuracy.

After seasoning the above dough with salt and pepper, I add olive oil and mix the mass carefully again. All those things should be done before squeezing. Be ready that the mixture will release lots of juices. When the potatoes mixture is dry, you will get the crispy hash browns.

Now I am taking a skillet, preheated beforehand, pour some olive oil and put the above mass into it spreading the shred potatoes over the bottom evenly and pressing with a spatula or bare hands but be careful to burn yourself. It should be cooked for about three minutes until the potatoes get brown, then I flip it over using a plate, just as it is described in the recipe. Once I have tried to turn it like crepes with help of a spatula but a layer is rather thick, it breaks. So, try. Perhaps you will succeed to make it without a plate.

Now I give it a couple of minutes to cook and crack eggs on the hash brown, then sprinkle salt, paprika, pepper, other seasonings, add cheddar cheese on the top and put the pan into the oven for about ten minutes. Watch it. The ovens are different. You may need less or more time so that the eggs get cooked but the yolks stay soft.

I do not serve at once. It seems to me that five or ten minutes needed to cool make the dish even tastier. Do not cover with a lid otherwise you will spoil the crunch.

And the bacon of course! You can refuse it, but it is delicious. Just fry it on a separate skillet in butter with brown sugar and salt. Before serving add them to the dish.

Ingredients

  • 3 potatoes, shredded
  • 1 onion, shredded
  • 5 ml salt
  • 5 ml pepper
  • 75 ml olive oil
  • 30 ml butter
  • 4 eggs
  • 8 ml paprika
  • 5 ml pepper
  • 2 stalks onions, chopped
  • 2 handfuls cilantro
  • 2 handfuls cheddar cheese

Instructions

  1. Preheat the oven to 375F. Take a food processor, shred potatoes and onions. Add the mixture into a strainer. Place a bowl underneath it. Add olive oil, pepper and salt, mix everything together.

  2. Squeeze the mixture. It should release a lot of liquid. Discard it. Take a pan and place it over medium heat. Add olive oil.

  3. Add potatoes on the pan, cook it for 3 minutes. Add butter, wait until it melts. The bottom of the mixture should be brown. Cover the pan, flip the mixture over. Hash brown will be on the plate.

  4. Place it back in the pan with the brown side up. The other side should be brown as well, it takes around 3 minutes. Add eggs to the mixture. Add paprika, onions, cilantro and pepper. Add cheddar cheese.

  5. Bake the mixture for 12 minutes. The eggs should be wet. Remove the pan from heat, let the hash browns cool down. Serve warm with your favorite toast. 

Recipe Notes

You can peel potatoes and keep them in a freezer until you decide to cook.
