Ingredients

  • 250 ml buttermilk
  • 15 ml melted butter
  • 15 ml vanilla
  • 250 ml all-purpose flour
  • 1 beaten egg
  • 15 ml sugar
  • 15 ml baking powder
  • 4 ml salt
  • 125 ml sprinkles
  • 8 ml baking soda

For the topping:

  • 20 blueberries
  • 1 big banana, sliced
  • 6 raspberries
  • 8 strawberries
  • 30 ml maple syrup
  • 10 marshmallows

Instructions

  1. Take a big bowl, whisk together eggs, buttermilk, butter and vanilla. Take another bowl, whisk together baking powder, soda, salt, sugar and flour. Add other ingredients and stir until everything is nicely combined. Add the sprinkles.

  2. Let the butter rest for 5 minutes. Take the pan and place it over a medium heat. Spray it with oil. Take the cookie scoop and put two pancakes into the pan. Then take a spatula or a wooden spoon and add batter into the shape of bunny years. Experiment with shapes to give your bunnies different emotions.

  3. When the pancakes are set, flip them on the other side. It usually takes 2 minutes to cook on one side. Bunny ears cook even faster, 1 minute is enough. Pancakes should become golden. Keep pancakes on a warm plait until you make other bunny parts. Every time you put new pancakes on a plate sprinkle it with oil. If a pancake sticks to the pan, you'll have to start all over again.

  4. When all pancakes are done, place the biggest one on a plate and two bunny ears on the top to form a head. Place small bananas as eyes, put little blueberries in the middle of bananas. A raspberry is a nose and marshmallows are two tiny teeth. You can shape the strawberries into a bowtie. Get creative here and make different facial expressions. Serve warm with maple syrup or your favorite sauce.

Recipe Notes

This recipe is fun and you can get very creative! Mix chocolate chips or other berries into a batter and your bunny will have polka dots. You can create a suntanned tail, too.

You can also add canned pumpkin and pumpkin pie spices to the batter to make a warm autumn breakfast. You can make the bunny even cuter with strawberry heart. Try to get berries that have pointed bottoms and rounded tops, use a paring knife to cut the shapes you like.
