Egg and potato skillet

This breakfast requires only one pan to make and you will have cheesy, crispy bacon flavor with eggs and cheese. It may look like a dinner recipe and you can whip it up for brunch or lunch too.

My favorite time of the day to eat this delicious combination is morning, because it gives me energy to stay active during the day. This skillet is always a winner when it comes to fulfilling recipes.

I know many people make cereal or smoothies in the morning, but this is not my kind of breakfast. I need something with eggs and cheese in it. I usually eat protein, carbs and fats in the morning to feel full. And if you’re anything like me, you will love getting protein and fats from this skillet recipe.

I urge you to make this skillet, it is loaded with goodness. It won’t be long until the entire dish will disappear. It’s very easy to get the most out of eggs, potatoes and bacon, you don’t need to be a professional to get an interesting combination of flavors.

Just sauté the onions, add everything else and cook until ready. If you don’t have much time in the morning, you can omit the onions. I like them because they add a sweet and caramel flavor to the dish, so it’s worth 5 minutes of your time. And you can experiment with cheese types and spices, the recipe is very versatile.

This egg and potato skillet is one of my favorite breakfasts. This is a delicious combination of savory cheese, salty bacon and creamy potatoes. Your family will get excited about this the second they smell the aroma from this. It's very easy to make and very fun to eat.

  • 700 g potatoes, peeled
  • 30 ml olive or coconut oil
  • 200 g diced bacon
  • 2 onions, sliced
  • 4 eggs
  • 60 ml mozzarella or cheddar cheese
  • 10 ml pepper
  • 5 ml salt


  1. Prepare the potatoes by dicing them into small cubes. Take a skillet and heat the oil over medium heat. Cook potatoes until they become crispy and brown, it usually takes 20 minutes. You can speed up the process by covering the skillet with a lid. Make sure to check potatoes regularly, they shouldn't burn. It takes around 15 minutes.

  2. Add the bacon to the potatoes, fry for 10 minutes until the bacon becomes crispy and brown. Stir it every 5 minutes or it will burn. The potatoes will be crispy on the outside but very soft and creamy on the inside. 

  3. Add onions, stir them for 5 minutes, season with salt and pepper. The bacon will release fat for the eggs. Fry the eggs until whites aren't wet anymore, the yolk should be cooked to your taste. Serve hot. This recipe isn't good for meal prep because the eggs will lose their texture.

Recipe Notes

If you want to experiment with the ingredients, try to add fresh dill, cheddar, goat cheese, cilantro and black beans. Everything with lots of protein and strong, savory flavor goes well with bacon and eggs.
