The best steak to choose for this recipe is skirt, flank and sirloin. They are great when finely sliced as they’re tougher than other parts. Just season your meat with salt and pepper. Cut them into thin slices and fry with eggs. It’s super quick and very convenient if you need a big breakfast.

Ingredients

  • 8 oz steak
  • 4 eggs
  • 30 ml butter
  • 2 oz cheddar cheese
  • 8 oz asparagus
  • 4 ml salt
  • 4 ml pepper

Instructions

  1. Start by preparing the asparagus. Trim it and place in a dish. Add 15 ml of water and put in a plastic wrap. Now prepare the steak. Season it with salt and pepper, then put a pan over a medium heat, add 15 ml of butter. Add steaks and cook each side for 3 minutes. Cook longer, if you like another level of doneness. I like them more done. Start with the eggs while stakes are cooking. Then remove the meat and put it on a foil.

  2. Proceed with eggs. Take a pan and place it over a low-medium heat. Take a bowl, crack eggs, add cheese and gently mix together. Add 15 ml butter on a pan, add the mixture and let it cook for 2 minutes. The bottom should set.

  3. Scrape the eggs to the center with a spatula. Make a hole in the middle, turn the heat off. Push eggs to the center every 20 seconds, then make a hole, then push again. After 3-4 minutes you will get custardy eggs.

  4. Finish with placing the asparagus in a microwave. Cook for 1-2 minutes. Leave it in a microwave until the meat and eggs is ready. Serve it by placing a steak on a plate, add asparagus and season to taste. Place eggs on top and season as well. You can substitute spices or add any topping you like.
