Early last summer my husband and I went to Freeport, Maine for a long extended holiday. We stayed at big modern hotel that was recently bought and refurbished by a network. Among other stuff the room rate included continental breakfast that featured one the most delicious pastries I ever tasted in life.

The salty smelling ocean breeze accompanied by absolutely stunning sweet and airy morning scones and donuts sprinkled with chocolate brought to bed along with a cup of steaming latte, relaxed atmosphere and great nature sightseeings created a wonderful memories to cherish for years to come.

Now, making some of the pastries at home reminds me of those precious moments and brings back an ocean smell into our small living room. Share with me this joy by trying my favorite pastry recipe below.

  • 1/2 cup jam
  • 2 sheets puff pastry
  • 1 egg
  • 5 tbsp milk (icing)
  • 1 cup powdered sugar (icing)
  • 1 tsp vanilla extract (icing)


  1. Unfreeze pastry, unfold the pastry sheets and cut each sheet into 3 stripes, then every strip is cut in 3 

  2. Repeat the following for each of piece of the pastry: spread 3 tbs jam and leave some place around the edge with no spread

  3. To prepare egg mix swirl 1 egg in the bowl and then use the mix to brush the edges that were left with no spread

  4. Take next piece of pastry and place it on the top of the first one, gently press around the edges to seal, use fork to crimp edges

  5. Brush the top of the pastry with egg mix

  6. Place a sheet of a parchment paper into the rectangular the baking tray, and place the pastry on the parchment

  7. After all pastries are built, put the baking tray into the freezer for approx. 3 hrs.

  8. Pre-heat oven to 370 degrees (F) 

  9. Bake for half an hour till pastries are fully puffed

  10. While the pastries are being baked mix milk, sugar and vanilla extract, swirl for 1 minute

  11. Once pastries are baked sprinkle them with icing
