This culinary masterpiece follows the Mexican traditions. Being loaded with particular flavor this dish resembles ground beef enchiladas but this version is made of carved zucchini boats stuffed with the meat filling. We do not use a tortilla. Sounds even more dietary doesn’t it?

The zucchini is a vegetable, the different parts of which are used in various cuisines. It is important to choose the young one with soft seeds and a little bit sweet taste. It can be fried, bakes, and steamed or even served fresh. There is no need to unpeel it, just cut in pieces or grate as it is required in the recipe.

Zucchini will help to lose weight due to low level of calories. They are rich in vitamin C, fiber, manganese, copper, folate and other nutrients. If you often consume them, you can keep your heart strong and reduce blood pressure.

Ingredients

  • 1 tbsp olive oil
  • 1/2 cup red onion
  • 1 pound lean beef (ground)
  • 2 piece garlic cloves
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 3 piece large zucchinis
  • 1.5 cup sauce
  • 1/2 cup cheddar cheese
  • 1/4 cup fresh cilantro
  • salt to taste

Optional toppings:

  • tomatoes
  • green onions
  • avocado

Instructions

  1. Take a skillet and put it over the medium high heat.

  2. Pour some olive oil and add chopped onions to the pan. Stew the onion for 3 minutes until it is soft.

  3. Ground beef beforehand and put it into the skillet. Cook as long as it is needed to make meat ready without pink color at all, stirring from time to time.

  4. Now add minced garlic, paprika, cumin, and salt. Mix the ingredients thoroughly. Cook for a couple of minutes and remove from the heat. Set aside.

  5. Take the zucchini and cut them in two equal parts lengthwise. Take away the seeds using a spoon creating a kind of a boat.

  6. Take the baking dish, put zucchini boats into it. 

  7. Now fill in the boats with beef mixture.

  8. Top them with the red sauce and shredded cheddar cheese.

  9. Make a lid of the tin foil and cover the baking dish. 

  10. Heat the oven to 3500F and put the dish into it. Bake during 20 minutes.

  11. In order to achieve the crispy crust, take away the tin foil and continue cooking the dish for 5 minutes uncovered.

  12. Remove from the heat and garnish with fresh cilantro.

  13. Serve it warm.

Recipe Notes

For optional toppings use the diced fresh vegies, which will decorate the meal with bright red and green colors. Enjoy the dish!
