- 12 precooked crepes
- 3 tbsp olive oil
- 1.25 pounds mushrooms
- 1/4 cup fresh parsley
- 1 tbsp fresh thyme leave
- 1 piece garlic clove
- 1 package of fresh spinach (10 ounce)
- 5 oz goat cheese (crumbled)
- 2 cups mozzarella cheese
- salt and pepper to taste
This recipe does not include the steps of crepes cooking. You should take the already baked ones and set them aside.
Preheat the oven to 350°F.
Take a large frying pan, pour the oil into it and heat a little bit.
Take any kind of mushrooms. You can combine various types of them and slice them.
Add sliced mushrooms to a frying pan and cook over medium-high heat during about 10 minutes. Do not forget to stir them. They become getting tender and brown. That’s the condition you need.
Add the chopped parsley, thyme, minced garlic, salt and ground black pepper.
Cook the mixture of mushrooms with new ingredients and seasonings during a minute.
Now it is a high time to reduce the heat to medium.
Add the spinach, stir carefully, cover the frying pan with a lid and cook for about 2 minutes more.
To finish, add the cheese and wait until it is melted stirring all the ingredients carefully.
Remove from the heat.
Take a spoon of the filling you have made and put on the center of each crepe.
Roll up the crepes. Put them to a baking dish.
Sprinkle with mozzarella cheese and cover with foil.
Put it over heat for about 15 minutes to make cheese melted.
