  • 15 ml vegetable oil
  • 1 pound chorizo without castings
  • 500 ml hash browns, frozen and thawed
  • 12 eggs
  • 125 ml cream
  • 8 tortillas
  • 250 ml Monterey Jack cheese
  • 250 ml cheddar cheese
  • 4 ml salt
  • 4 ml pepper

For the topping:

  • 30 ml cilantro
  • 50 ml avocado
  • 50 ml salsa
  • 15 ml hot sauce


  1. Take a skillet, pour vegetable oil on it and place on a medium heat. Put the chorizo into the pan. Take a wooden spoon to break the meat apart. It should take around 10 minutes. Remove the chorizo from the heat and place on a table for 10 minutes.

  2. Add hash browns, season with salt and pepper. Cook for 8-10 minutes. Potatoes should become crisp and brown. Remove the mixture, wipe out the pan.

  3. Take a big bowl, crack eggs, add milk, season with salt and pepper and whisk everything together. Place a pan on a low heat and pour the mixture. Prepare the scrambled eggs, stirring them every minute. It should take around 7 minutes for eggs to cook. They should be a bit wet when you add cheese. Set the mixture aside, wipe out the pan.

  4. Now it's time to assemble burritos. Layer cheese, then chorizo, hash browns and eggs in the center of tortillas. Flop the pieces of every tortilla over each other, do the same with the sides.

  5. Place burritos in the skilled and cook for a minutes. They should become crispy and brown. 

  6. Serve with any topping you like.
