Breakfast tacos with beef and eggs
Sweet peppers, scrambled eggs and beefs make this delicious recipe everyone's favorite for breakfast. It only takes 30 minutes and you can make it one day in advance.
- 15 ml olive oil
- 1 sliced bell pepper, green
- 1 sliced bell pepper, orange
- 1 sliced onion
- 1 package of shredded beef
- 8 tortillas
- 15 ml butter
- 7 eggs
- 30 ml milk
- 4 ml salt
- 1 package black beans
- 1 chopped avocado
- 1 chopped tomato
- 125 ml crumbled cotija cheese
- 15 ml salsa
- 15 ml cilantro
Put a skillet on a medium heat. Add onions and peppers and wait for 5 minutes. Stir them from time to time to make every piece soft. Add beef and cook until it is warm, around 3 more minutes.
While the beef is cooking, heat the tortillas over a high heat for 20 seconds. You can do it in a microwave. Take another skillet, place it over a medium heat, and put butter inside. Warm the beans in a saucepan.
Put eggs in a bowl, add milk and whisk together. Add salt and pepper. Cook over a medium heat until the eggs are softly set. Stir the mixture over with the spatula, eggs shouldn't burn.
Add 2 tablespoon of beef in the tortilla, then scrambled eggs, beans and the rest of the ingredients. Repeat this steps with other tortillas. You can sprinkle it with salsa, cilantro or your favorite sauce. Serve immediately.
