Soy chorizo is perfect for burritos, tacos or anything where you can use ground meat. You can even make the soy chorizo chili and they will be the hit. Stir in the chorizo any tomato chili that you can cook to give this dish a spicy flavor.
This recipe is similar to Spanish paella and it tastes even better. You can use any type of rice. The rice will have delicious golden color from tomatoes and chorizo, but if you want to make it even brighter you should use sweet paprika, tomato paste, saffron or turmeric powder.
I don’t recommend using artificial dyers, they aren’t good for anyone, especially for children. Natural ingredients will give the chorizo a really nice color and a very delicious flavor.
Breakfast soy chorizo recipe
These soy chorizo bowls are a great make ahead breakfast that is not only healthy but also incredibly filling and quick to make. If you haven't tried soy chorizo yet, you're going to discover a whole new world of flavors.
- 15 ml avocado oil
- 375 ml diced onions and peppers
- 0.5 can diced chilies
- 2 servings soy chorizo
- 0.5 can black beans
- 4 ml salt
- 4 ml pepper
- 500 ml cooked rice
- 1 tbsp enchilada sauce
Take a skillet and heat it over a medium heat. Add onions and peppers, sauté the veggies for 3-4 minutes. Add chorizo, beans and chilies. Gently combine everything and finish cooking until the vegetables are soft.
If you're doing this a day in advance, you shouldn't worry about heating anything through. Just cook the vegetables until they are soft and refrigerate the rest.
Give your mixture a taste and add salt and pepper to taste. Don't forget that you will add sauce on top. Serve on a plate, sprinkle with enchilada sauce.
If you want to meal prep, you should place 250 ml or cooked rice in a container, add chorizo mixture and drizzle with sauce. Then heat everything in the oven or microwave for 5 minutes.
