Now we are going to cook beans with cheese offering plenty of protein and that will make your breakfast rich indeed. You can add some diced bacon or sausage to it if you cannot imagine your morning without that food. It won’t spoil the recipe. But of course the key moment is spinach cooking mild.

This recipe is good both for adults and kids, providing them with breakfast full of health benefits including fiber. It is changeable. You can try our version first and then experiment with the ingredients adding the ones you prefer adhering to the technology of the recipe. So here we use spinach and white beans. In order to make it piquant, we choose garlic and a sharp white cheddar cheese.

All the components of filling are frozen easily without changes in taste when cooked again. The tortilla does matter, it should be made of white flour. Let’s start.

Breakfast Freezer Meal Recipes: Quesadilla

Breakfast Quesadilla with eggs, spinach, cheese, and beans. This freezer meal recipe is filling, being easy to make ahead and suits the moments when it is important to serve fast, healthy meals. Offering a vegetarian version, we think that it is rather satisfying even without sausage.

Ingredients

  • 10 piece large eggs
  • 1 tbsp milk
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tbsp extra-virgin olive oil
  • 5 cups lightly packed fresh spinach roughly torn or chopped (about 4 ounces)
  • 8 piece wheat tortillas (taco size, about 7 inches)
  • 1.5 cup cheese (cheddar, Swiss, mozzarella, or another similar melty cheese)
  • 1 piece can with white beans (15-ounce)

Instructions

  1. Take a large bowl and crack eggs into it adding milk, salt, garlic powder, and pepper. Whisk the components together and set the bowl aside.

  2. Take a large nonstick skillet, pour some olive oil to it and put heat it over medium heat to warm up. 

  3. Add the spinach and cook. Be attentive not to overcook it, stir often. It should starts wilting in about a minute. 

  4. Add the beans, reduce the heat to low and add the eggs mixture. Cook them stirring often with a rubber spatula until the eggs set. It takes about 5 minutes. 

  5. Taste and if it is a lack of salt, add some of it. Remove from the heat.

  6. Take a tortilla and sprinkle it with a little bit of shredded cheese.

  7. Put a large spoon of the egg mixture on the top and fold the tortilla in half. 

  8. Now you can freeze the prepared tortillas with filling cooling them first and wrapping in a film or cook immediately for serving right now.

  9. Put the skillet over the medium heat and grease it with nonstick spray or olive oil. 

  10. Place the assembled quesadillas into it and cook from both sides until golden. The cheese should be melted. It takes about 5. 

  11. Serve and enjoy the meal!

Recipe Notes

Mind that in a freezer the quesadillas can be stored for up to 2 months.
