Breakfast burrito

This is one of the easiest burrito recipes you can find and you can meal prep to serve the next day. With this amount of ingredients you will get 8 burritos but you can double the ingredients and make more of them, then store in the freezer and take out when you’re ready to eat.

If you want to freeze the burritos, make them the day before you want to eat them. Then wrap every burrito in foil and place them in the oven to thaw. It takes less than 15 minutes and delicious breakfast is ready.

This is a very easy and quick recipe with cheese, sausages and eggs. You get health vegetables in with peppers. Tortillas are store-bough, so you only need 40 minutes to prepare this delicious breakfast.

For the burrito salsa:

  • 1 avocado, diced
  • 125 ml tomatoes, diced
  • 1 minced shallot
  • 1 minced garlic
  • 1 minced jalapeño pepper
  • 15 ml lime juice
  • 8 ml salt
  • 2 ml cumin
  • 60 ml chopped cilantro

For the burritos:

  • 4 eggs
  • 4 ml smoked paprika
  • 5 ml salt
  • 1/2 lb Italian sausage (any spicy sausage is ok)
  • 6 oz Monterey Jack cheese
  • 4 tortillas
  • 10 ml vegetable oil


  1. Prepare the salsa: take a bowl and place all ingredients in there. Mix to combine them together. Let it sit on the counter for 10 minutes. Take another bowl, add paprika, salt and eggs. Whisk them together and set aside.

  2. Take a pan and heat it over high heat. Fry the sausages. They should get brown but not burn, stir them frequently while cooking. Take a spoon and place sausages on a plate, leave the dripping in the pan. Add the eggs, reduce the heat to low and prepare scrambled eggs. Place the eggs on a plate. Clean the pan, place it on the stove.

  3. Prepare the burritos. Spoon the salsa on every tortilla, add sausages, eggs and cheese. Carefully fold the sides of the tortilla and tuck in the edges. You can have salsa leftovers, they can be refrigerated for 3 days.

  4. Drizzle the pan with oil, place it over medium heat. Add the burritos to seal the edges. Cook for 3 minutes until they become brown. Serve warm.
