Ingredients

  • 10 eggs
  • 1/2 pounds bacon
  • 6 oz shredded sharp Cheddar
  • 1/2 cup olive oil
  • 1.5 pounds potato
  • 1 large yellow onion
  • salt and pepper

Instructions

  1. Prepare your oven and preheat it to 350 degrees F. 

  2. Take a 12-inch skillet and put thick slices of bacon in it cooking over medium-high heat for about 10 minutes. The bacon should become crispy. There will be rather a lot of fat in a skillet. 

  3. You should take out the bacon from a skillet with a slotted spoon, so that all fat is left in the skillet.

  4. Add slices of unpeeled potatoes and thin rings of onion into the skillet and pour olive oil. Season with salt and pepper and continue cooking. You should stir the mixture from time to time. 

  5. When the potatoes and onions become soft and browned, return the fried bacon. Stir all the components to make them distributed evenly. Remove from the heat.

  6. Now take a large bowl, crack the eggs into it, add pepper and salt and whisk thoroughly. 

  7. Put the cheese into the egg mixture and blend. 

  8. Take a baking dish and transfer the cooked potato mixture to it leaving a place for eggs mixture, which is coming next. 

  9. Place the dish into the preheated oven and cook for about 20 minutes or less. The eggs must set and even puffed around the edges.

  10. Take out of the oven and leave it to cool a little bit. Serving add sauce if you want.
