Bacon and Egg Breakfast Recipes: Frittata
It is very common that in the morning there is no time for preparing food. Everybody is in hurry. So, if you are running short of time, it is well worth to turn to this dish consisting of such simple components as eggs, bacon and vegetables. Believe us, you will manage to make a nutritious tasty breakfast for your family and save the time. It will take just 20 minutes.
- 1 tsp oil
- 125 gr bacon
- 1 medium leek
- 2 tomato
- 50 gr spinach
- 6 eggs
- 2 egg whites
- 1 small avocado
- fresh parsley
First you should chop the vegetables. Do it roughly.
Take a non-stick frying pan that can be used both on a stovetop and in the oven and heat it.
Add some oil or use a correspondent spray and put bacon slices and roughly chopped leeks inside.
Cook the products for 5 minutes over a medium heat. Don not leave it alone and continue stirring. The leeks should soften.
Now it’s a time to add chopped tomatoes and spinach cooking all the mixture 2-3 minutes. All the ingredients should be well mixed and soft.
Gently whisk the eggs together with egg whites, season with pepper and salt.
Add several drops of oil or use a spray and pour the whisked eggs into the vegetable mixture.
Chopped avocado and put it on a top of all that.
You should cook the meal for 5 minutes without a lid. The eggs should almost set.
Cover a frying pan with a lid and continue cooking for 2-3 minutes. The frittata must set in the middle and be completely cooked. Remove from the heat.
Before serving, season with fresh parsley.
