  • 20 ounces pineapple chucks, drained
  • 1/2 cup pineapple liquid
  • 1/2 pound dry elbow, cooked macaroni
  • 1/2 cup shredded carrot
  • 2 cups sliced cooked ham
  • 1/4 cup green onion

For the dressing:

  • 1/2 light mayo
  • 1/2 cup pineapple juice
  • 1/4 cup Greek yogurt
  • 1 tbsp sugar
  • 1 tbsp apple cider vinegar


  1. Take a big bowl, add pineapple chunks, macaroni, carrots, ham, and green onion. In the meantime, take a deep dish and mix together Greek yogurt, mayo, sugar, pineapple juice and cider vinegar. Pour over pasta and leave it for 1-2 more minutes. The meal is ready.

Recipe Notes

If you have leftovers and they seem dry, add one tablespoon of warm water to loosen the sauce.
